Definition of Nice Cream – ice cream made from bananas

Ice cream made out of bananas I hear you question in disbelief, whatever next? Milk made from nuts? Cheese from nutritional yeast?…Yes, we’re really bizarre and use weird ingredients in our food.

Anyway, for me breakfast is the best meal of the day. Lots of people might find it quite sad how I wake up every morning genuinely excited for that first mouthful of whatever sweet or savory concoction I decide to create. But there you go, I’m easily pleased.

When I discovered (N)ice cream, it was like all my christmas’ had come at once! Not only does it genuinely taste like thick, creamy ice-cream, but it has so much nutritional power, that this big bowl of goodness could probably keep you fueled all day if need be.

You have of course, complete creative license as far as flavourings and toppings goes but what you will most definitely require is the following…

  1. 3-4 bananas (cut up into chunks and left to freeze in a container overnight)
  2. A blender
  3. A plant-based milk (such as almond, cashew, hazelnut, rice, coconut or soy)
  4. Maple syrup

I would recommend leaving your bananas to defrost slightly (30 mins) in the morning, before placing it in the blender and adding about 250ml of your plant-based milk and the maple syrup.

When blended this will create a creamy ice cream like substance and here is where the fun begins. Go absolutely mental with creativity if you want – I’ve heard of people trying ingredients such as coconut and mango, mixed berries, chamomile and vanilla…whatever you chose, the blender is your oyster, so knock yourself out.

Being a complete and utter chocolate fiend myself, I add in cacao powder and some cinammon before blending some more AND FINALLY, sprinkling Spirulina (powder rich in B12) on top when the (n)ice cream is securely located in my breakfast bowl.

Now for the toppings. We’ve got here…

  • dessicated coconut
  • cacao nibs
  • chia seeds
  • goji berries
  • chopped hazelnuts
  • melon
  • berries
  • dates
  • flaked almonds

Yes I tend to go overboard, but what can I say, I’m a woman possessed.
